The island of May does not hold anything of value to me when I looked just now, it has no Ley force or fault lines, so would not have been of interest to the Templars I feel, they were aware of Earth forces and used them in many Templar Churches. While its a much bigger island and easy to come and go, this might have been the difference between Lamb Island and the others, hard to reach and even harder to land on !!
